What is the difference between besan and sattu?
If a particular ingredient is roasted and ground into a powder, it is referred to as sattu. However, when horse gram or chana is ground but not roasted, it is referred to as besan. If besan were roasted and powdered, it would be called sattu afterward. Also, sattu is slightly coarser than besan.

How To Make Sattu Powder At Home
- Wash 2 cups of chana dal thoroughly with water.
- Boil it in 3 cups of water for 7 to 8 minutes until it becomes soft and mushy.
- Drain out the water and put the daal in a bowl.
- Cover boiled chana dal with clay wrap and leave for 3 to 4 hours.
- Then spread it on a cotton sheet and dry for another 3 to 4 hours in the shade.
- Roast the dried chana dal for 45 minutes at low flame.
- Grind the chana dal. You can keep the texture of the powder, fine or coarse, as per your preference.

Sattu Cookies
Ingredients:
Sattu Powder: 1 cup
Jaggery Powder: ¾ cup
Almonds (coarsely grounded): ½ cup
Milk: ¼ cup
Ghee: 2 tablespoon
Cardamom powder: 1 tablespoon
Baking Powder: ¼ tablespoon
Baking Soda: ¼ tablespoon
Salt: 1 pinch
Instructions:
- Mix sattu powder, jaggery powder, baking soda, cardamom powder, baking powder, and salt in a bowl
- Heat the ghee and add it to the mixture. Keep mixing till it starts sticking together.
- Add milk and knead softly.
- Preheat the oven. Use ghee to grease the baking tray.
- Make cookie-like shapes from the dough.
- Place them on a baking tray and bake in the oven for 8 minutes at 180 degrees from both sides.
- Let them cool down for 10 minutes after baking.

Sattu Ladoo
Ingredients:
Sattu flour: 1 cup
Jaggery Powder: ½ cup
Ghee: 3 tablespoon
Cardamom Powder: ¼ teaspoon
Instructions:
- Add ghee to a pan and heat for some time.
- Add sattu flour in it and mix at low flame for 2 minutes.
- Turn off the stove. Then mix jaggery and cardamom powder.
- Mix additional 2 tablespoons of ghee.
- Make ladoos from the mixture.
- Add more ghee if the ladoo does not bind well.
